含铁型脱氧剂对煮制葵花子抗氧化研究(7000字)
摘 要:针对实际生产中葵花子在储藏中容易发生氧化酸败的情况,添加脱氧剂包装对葵花子进行抑制氧化酸败效果的研究。结果表明:采用低透气性的包装材料添加50型铁系脱氧剂抽真空包装,可明显抑制过氧化值和羰基价的增加,延缓酸败。采用复合材料包装,添加50型铁系脱氧剂包装。可使葵花子同时与对照相比在20 ℃室温下可以延长货架期到336 d。

Study on Antioxidation of Iron Containing Deoxidizer in Cooked Sunflower Seed
Abstract: Packing with material of lowventing quality and adding deoxidant were applied to inhibit rancidificationof stir- fired sunflower seed during storage.The plastic package and adding deoxidant model 50 package with material of lowventing quality can constrain the accelerating speed of peroxide values and carbonylgroup values ,and delay rancidification obviously. Compared with the control,the sunflower adding deoxident model 50 increased and shelf-life at 20℃condition was prolonged 336 d.
